Homestead Chicken Pie

Isn't it about time for a tummy warming homestead recipe? This one has become a recent favorite. I've always loved pot pies with pie crust, but this one with biscuit topping is quicker and easier plus just as tasty.

Everything is homestead except the flour, soda, and salt.

Layer in the bottom of an 8x8 baking dish:
  • leftover homegrown chicken in bitesize pieces
  • homegrown frozen spring garden peas, thawed
  • home canned carrots, drained

Gravy:
  • 2 tbsps schmaltz (rendered chicken fat)
  • 2 tbsp flour
  • 2 C. canned chicken bone broth

Lightly brown the flour in melted fat. Slowly add the broth & whisk out lumps. Stir till thick and pour over chicken and veggies.

Biscuits:
  • 1.5 C. flour
  • 1/3 C. schmaltz
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1/2 C. whey

Cut fat into flour, salt, & soda. Add whey & mix with a fork. Drop onto hot gravy, chicken & veggies. Bake in a hot oven (about 400° F/200° C) for 15 minutes or until biscuits are brown and gravy is bubbling. Serve.

Oh that looks so YUM! I had homegrown chicken'n'biscuits once and though I've eaten tons of store-bought chickens, that real chicken dinner still lingers as being the best.

That looks delicious, Leigh! I've been making a lot of veggie/farro soup lately (something about the weather, perhaps?) but am planning a trip to the local butcher shop today for some chicken and sausages. I'll have to try using chicken fat in biscuits! I've found it makes a delightful addition to steamed beans.

Quinn, I first read about using the chicken fat for biscuits in Putting Foods By. I confess it shocked me at first, but after reading Nourishing Traditions, I'm delighted to have another healthy home source for fats.

Oh yeah....I'm hungry now and it isn't even 7am! I do the same thing for quick "pot pies"....biscuit mix on top instead of rolling out pie crusts. Good eat'n :)

Holey smoley, that picture could be right out of a deluxe gourmet-ish food magazine!

I have plenty of chicken meat to use.( Many folks have commented that my chicken dishes are flavorful. And the only chicken served is either old stewing hens from the flock or unlucky "too many" roosters.)

Perfect timing! I have the leftover chicken in the fridge right now (Kid the Younger made an unexpected visit home this weekend & I roasted up one of the freezer-trained birds). There is schmaltz in the freezer, too. Yay! I don't have to think about what to cook for dinner!

Thewovenspoke, funny, I just learned about this recently. We had pie crust pot pie unless it was chicken and dumplings (another fav)

Renee, I have to say that I've only made small batches of schmaltz and use it pretty quickly because I find the biscuits so tasty! Majorasue mentions freezing it below, so that must be a good way to go!

Mama Pea, I'm really getting to appreciate these one pot meals!

Tonight I made chicken and veggies with gravy and rice from the old hens that I canned. They turned out real well that way.

I'm taking dinner to a friend's house tomorrow evening. I have left-over chicken stew that I'm going to turn into chicken pot pie based on your recipe...with a few lazy girl adjustments. The stew is already made, and I'll use the store brand bisquick for the biscuits as I don't have the fat and well this will be easier.
I wonder just how much of my stew I have left over? Maybe there's enough for two pies?
