Cheesecake Ice Cream

Cheesecake ice cream on carrot bundt cake.

Our days have turned hot again, so what better treat than ice cream! After my Heavenly Chèvre Cheesecake turned out so well, I got the idea for cheesecake ice cream. The cheesecake batter is so similar to the custard for making ice cream that it seemed a logical step!

Cheesecake Ice Cream

My ice cream freezer is a small Cuisinart. I love it because it makes it easy to make ice cream for just the two of us. The proportions in this recipe are for that and make about a quart and a half of ice cream. Adjust for a larger machine.
  • 2 cups chèvre* (how to make here)
  • 1 & 1/2 cups cream
  • 1/2 cup whole milk
  • 1/2 cup sugar
  • 3 egg yolks
  • pinch sea salt
  • 1 tsp vanilla or flavoring of your choice

In a sauce pan heat cream, milk, sugar, and salt until sugar melts. Beat egg yolks in a blender, continue blending and slowly add milk and cream mixture. Add the chèvre and flavoring. Blend well. Refrigerate overnight. Churn it up in the ice cream maker the following day.

This paired really well with carrot cake. I'm not keen on cream cheese frosting, so I bake carrot cake in a bundt pan and we enjoy it without frosting. The cheesecake ice cream, though, was better than frosting!

*If you don't have chèvre, ricotta or cream cheese would substitute nicely.

Now you have gone and done it. I think this was my sign. I realized that Little Trouble who is really not little being a three year old now nor is she like her namesake grandma I-C-T-R-O-U-B-L-E any trouble at all is still in milk. That is a saga in itself but I have a test quart in the fridge and if it is suitable I will be milking again and guess what is in my future?

Thank you for your timely sharing of this wonderful looking ice cream treat. I think I may try it with a lemon pound cake.

Goatldi, Little Trouble is still in milk? That's wonderful! I hope it's a go. Lemon pound cake sounds like another great match for this ice cream.

Weekend-Windup, it is!

Paula, a definite keeper. :)

oh DEAR YUMMO! I just love carrot cake. Funny thing about the handbags i found = I have been training myself to use one because I usually just stuff my pockets :D

Please promise me this is calorie free and I am good.

Seeking Serenity, interesting about the handbags. I've always been more of a backpack kind of person, small day packs, but a shoulder bag is a nice substitute. Would much prefer pockets! Thinking a pocketed apron is what I need for around the homestead.

TB, my calories are always free! No extra charge, ever!

This sounds delicious and dangerous! It incorporates my two favorite desserts.

My wife has a Cuisinart ice cream maker and I absolutely love the ice creams she turns out with that thing. It really makes store bought ice cream very unappetizing!

Ice cream and carrot cake are my birthday "cake" of choice and have been since I can remember.

My husband would probably love the cheese cake ice cream! Me not so much. If I had and ice cream maker I would be making it often as I love ice cream! Nancy

Jo, that's always the perfect combination! LOL

Ed, homemade ice cream definitely puts all the boughten stuff to shame. :)

Nancy, I love my ice cream maker! Maybe Santa will bring you one this year. :)
