Canned Fig Coffee Cake

I had a jar of figs that didn't seal the other day, so I wanted to try something new with it. I dehydrate some figs, but I can most of them. Mostly, we eat the canned figs as breakfast fruit, but I'm always looking to increase diet diversity, especially with our homegrown foods. Coffee cake came to mind, you know, the kind with the crumb topping. Here's the recipe for my records.

Canned Fig Coffee Cake

Cake

  • 1½ cups of flour (I mixed whole wheat and unbleached white)
  • ½ cup sugar
  • 2 tsp baking soda
  • ½ tsp salt
  • ¼ cup soft butter
  • 1 egg
  • ¾ liquid* (see below)
  • 1 pint canned figs (could use fresh.)

Topping
  • ⅓ cup brown sugar, packed
  • ¼ unbleached flour
  • ½ tsp cinnamon
  • 3 tbsp firm butter

*Drain figs and set aside. Reserve and measure liquid. Top it off with enough milk or whey to make ¾ cup total liquid.

Make topping by mixing all ingredients until crumbly. Set aside.

Blend all ingredients except figs and topping. Fold in figs and pour batter into a greased square baking dish. Sprinkle topping over batter. Bake at 375°F (190°C) for 30 minutes or until toothpick comes out clean. Serve warm.

It's nice to have something else to make with canned figs!

Your recipe sounds delicious and I love figs. I've been wanting to try that Italian fig and proscuitto pizza? Something like that. Also , there's another recipe with figs, cheese and honey I think. That might be another fig recipe for you. It's supposed to be delicious from what I've heard. HOw wonderful to have canned figs in your pantry!

Nice to have a post to highlight for future reference. My little black mission fig is doing well and of course produce no fruit this year. ButI look forward to potentially have a bit next year and after that hopefully will be on our way !
I need all the help I can get with recipes and canning methods or whatever. This looks delicious!

Nancy, I use Tattlers. It took awhile to get used to them, but I really love that I can re-use them. I'm amazed Lehman's is cheaper than Amazon! I usually get mine directly from the Tattler company.

Goatldi, once fig trees get established, they do really well! I'm discovering more and more uses for figs, which is good since I have so many!

We don't have figs growing here and I never see them in the store so it probably isn't surprising that the only figs I've eaten are in Newton form.

I hadn't seen figs at my grocery store either, but I checked the store's website and found that they do carry them, dried, in produce. I'm going to figure out how to reconstitute them and then make this recipe. I miss living where figs grow...as a kid we used to eat them right off the tree.

Mr. Shife, this definitely makes a good dessert. Or for Sunday brunch. This is the first time I've added fruit to the recipe, and I have to say the figs were a good addition.

My grandfather was the one who made all the jams in their household. He would make strawberry/fig preserves and it was so good. But they never used it on biscuits, Grannie would make a strawberry/fig layer cake with cream cheese frosting.

Rhonda, figs combine wonderfully with so many fruits for jam. One of my favorite is fig and cranberry - it can almost pass for strawberry jam! The layer cake you mention sounds yummy. Ordinarily, I'm not a fan of cream cheese frosting, but I think it would be delicious with a strawberry/fig filling.
