Peach Upside Down Cake

Can I redeem myself for my last not-so-beautiful recipe? (Although I have to say it was a really tasty fresh veggie side dish. In fact, please scroll to the bottom of the post for an updated photo of the same salad. :)

My second peach tree has begun presenting me with ripe peaches, so I've still got peaches to play with. Some I'm freezing and of course we're still enjoying the harvest. This was a quickie dessert for which I wanted to save the recipe (hence this post!)


Peach Upside Down Cake

Topping: put in bottom of 8x8 inch baking pan.
  • 1/4 C melted butter
  • 1/4 C brown sugar
  • 1/4 tsp nutmeg
  • 2 cups sliced fresh peaches
  • small handful of fresh raspberries if you've got them

Batter: Mix and pour over topping.
  • 1/2 C softened butter
  • 1/2 C sugar
  • 1 egg
  • 1 and 1/4 C flour
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 C sour milk (or whey, yogurt, or kefir) 

Bake at 350°F (180°C) for about 30 minutes or until toothpick comes out clean. Let cool about 10 minutes then invert on platter to serve.

Dear Leigh - i'll take 2 pieces of the beautiful upside down cake, thank you very much - but i don't care how you try and decorate that aspic - bleck! i'm just not buying into it - bahahahaha!

Oh yummy looking cake Leigh. The aspic, um, like all aspics, just a bit creepy.
Peaches just starting to come into season here. Wishing I could get some locally grown apricots.

That satisfies my need for white and then some. I really like the green under it, too. I am jealous of the peach tree. I grew up with one in Texas...ah fresh peaches!

What is it about aspics? Must say I'm in the "blech" camp when it comes to them, too, though. Sorry.

I just want you to know I am suffering serious ripe, homegrown peach envy after reading this post. Oh, to have our own peaches! (Planted two dwarf peach trees this year . . . fingers crossed!)

Well, I think your new presentation of the aspic is a winner - major improvement. Next time, you could maybe have a creamy, ricotta/mayonnaise layer on top and a clear tomato/vegetable/etc. layer on bottom which might be even prettier while using the same ingredients.

Your peach (melba) cake looks heavenly.

LOL. I have to agree that if I saw it in a buffet I wouldn't take it either. But when you've been eating tomatoes and cucumber salads for weeks, you start to try to figure out something else to do! I reckon this means that if I ever write a cookbook, I'd better dump the aspic recipe. :)

Theresa, I think all jello is kinda creepy, LOL. Never have cared for it, but the aspic is really good and I'd actually make it again.

I've never thought about growing apricots. Maybe I should.

The green is Swiss chard - the only leafy green I've got growing! Really happy with our peaches!

Not just aspic, but jello period. I used to make a creamy jello salad with yogurt that was pretty good.

I hope your peaches do well! It's taken several years to get some, but I'll have enough frozen for some winter treats.

Thank you Lynda! Your suggestions really helped and I think visible layers would help even more. Not that I'd ever serve it for company, but it's been a tasty change of pace for us.

And yes, that is a melba, isn't it!

Oh, I love upside down cakes! I like the way that the topping is revealed when you turn the cake out. I made a plum and rosemary cake a while ago, when stonefruit were in season in my part of the world, and it was delicious. I bet your peach cake is too!

I'm sorry, Leigh, but dribbling something gooey on top of that aspic has triggered a major see-sickness here. Not a fan of aspic or that color. Ya can't win 'em all. I'm glad you're enjoying it. LOL
